Sell tasting menus, pairings and add-ons as one experience, and take as much of it up front as you want.
Add priced items to an experience: a menu choice, a wine pairing, add-ons. Guests pick some items once for the table, like the menu, and others per person, like the pairing. Each item can be single or multiple choice, required or optional, priced per booking or per guest.
Set prepayment to nothing, the full amount, or a percentage such as 50%.
